Many faculty members and students at EU are involved in interesting research projects that they undertake both in class, and in extra-curricular contexts.
EU’s Boca Raton campus held a Research Exhibition on January 22nd. This event allowed students to take a 30-minute break from class in order to hear about some of these EU-related research projects, all while snacking on some sandwiches and chips. The event was coordinated by the Boca Raton campus library.
Faculty members David Mark, Susan Proctor and Karen Scotti presented, along with an EU student. Mr. Mark, who teaches English Composition and American Literature classes, is a creative writer in his spare time, and he read one of his short stories to the attendees. Ms. Proctor is engaged in research involving nutrition and wellness, and at the event she spoke about a book that she wrote, which is available in e-book format on Amazon. Dr. Scotti, an animal chiropractor, brought in a stuffed dog and showed how she uses chiropractic tools and techniques on animals that she meets on house calls.
Afterwards, students were able to take handouts which featured some of the presenters’ work. It was a fun, unique experience! Below are pictures from the event:
